Cosby Creek Farms is a family owned and operated Total Organic Gourmet & Medicinal Mushroom Farm since 2007. Our mission is to providing high quality fresh mushrooms to local restaurants, health food stores and farmers markets in the East Tennessee area.

We use no chemicals or pesticides for growing our mushrooms and  everything is done by hand, from mixing the substrates to picking the mushrooms.  Mushrooms are an excellent source of potassium, riboflavin, niacin and selenium. Information about mushrooms and their health benefits is easily found on the Internet.

Hugh learned the art of mushroom cultivation from Paul Stamets when he went out to Washington State in March of 2007 to one of his in-depth workshops. He learned tissue culture, spawn generation techniques, substrate preparation, inoculation techniques, and strategies for maximizing yields. He went back in June of 2007 to a two day intensive workshop that discussed the current practices, evaluation of strategies, and choice of the appropriate fungal candidates for Mycorestoration. He got hands-on experience in applying mycelium and designing fungal responses to catastrophia.
